What is Matcha?
Matcha is a finely ground powder made from specially grown and processed green tea leaves. Originating in China and perfected in Japan, matcha has been central to Japanese tea ceremony (Chado) for centuries. Unlike regular green tea where leaves are steeped and discarded, matcha is whisked directly into water - meaning you consume the entire leaf and all its powerful nutrients.
How Matcha is Made
Matcha production begins weeks before harvest, when tea plants are shade-grown under covers for 20-30 days. This process boosts chlorophyll levels, giving matcha its vivid green color, and increases L-theanine content, which promotes calm focus. After harvest, leaves are steamed, dried, and stone-ground into a fine powder.
Grades of Matcha
- Ceremonial Grade - The highest quality matcha, made from the youngest, most tender leaves. Smooth, naturally sweet, and vibrant green. Best enjoyed as traditional whisked matcha with just water.
- Premium Grade - High quality matcha suitable for both drinking and light culinary use. Excellent for matcha lattes.
- Culinary Grade - Robust and slightly more bitter, ideal for baking, cooking, smoothies, and recipes where matcha is combined with other ingredients.
Health Benefits of Matcha
Matcha is one of the most nutrient-dense beverages in the world. Key benefits include a high concentration of antioxidants (especially EGCG), sustained energy without jitters (thanks to L-theanine), improved focus and calm alertness, metabolism support, and detoxifying properties from chlorophyll.
How to Make Traditional Matcha
- Sift 1-2 teaspoons of matcha powder into a bowl to remove clumps.
- Add 60-80ml of hot water at 70-80 degrees C (not boiling - this preserves the flavor).
- Whisk vigorously in a W or M motion using a bamboo whisk (chasen) until frothy.
- Drink immediately and enjoy the vibrant, umami-rich flavor.
Matcha Latte
For a matcha latte, whisk matcha with a small amount of hot water first, then add steamed milk (dairy or plant-based). Sweeten with honey or maple syrup to taste. Serve hot or over ice for a refreshing iced matcha latte.
Vibrant, energizing, and deeply nourishing - matcha is more than a drink. It is a ritual, a moment of mindfulness, and a celebration of nature's finest green.
